Inspired by the flavors of Veracruz, Mexico, this brightly colored meal is is flavorful as it is beautiful. Filets of tilapia, seasoned with wonderful blend of onion, garlic, and chilies, served over a bed of yellow rice and and medley of Brussels sprouts and caramelized carrots. The whole dish is finished with a serving of freshly roasted tomato salsa.
